Recipe’s for Clients with NO Appetite

I had a caregiver call me and ask, “How do I get my client to eat more?”  So I thought this was a great post to share with other caregivers who might be struggling with the same thing…

There are many reasons why some older adults lose their appetite or refuse to eat. But that doesn’t change the fact that you’re worried about them and are doing your best to give them the nutrition they need.  Many older adults struggle during mealtimes or simply refuse to eat because they’ve lost their appetite.  Here are some great recipe’s that might help you;

We have one client that loves pudding. Did you know you can use Ensure to make it?

Chocolate pudding

Makes: 4 -1/2-cup servings

Ingredients:

2 8-fl-oz bottles Vanilla Ensure

1 packet chocolate pudding mix

Directions:

Combine Ensure and pudding mix in a saucepan. Cook at medium heat until mixture comes to a boil. Lower heat and stir constantly until thick and creamy. Pour mixture into dishes. Chill until set. Cover top of pudding with waxed paper to avoid a film forming on top of the pudding in the refrigerator.

Banana Wafer Pudding

Makes: 16 3/4-cup servings       Cook Time: 15 min

Ingredients

1 (12-oz) box of vanilla wafers
1/3 cup chopped pecans
1/3 cup butter or margarine (can substitute with light butter)
3 bananas, sliced in circles
3 cups cold fat-free milk
1 (2.1-oz) package chocolate (or vanilla) instant pudding (can substitute with sugar-free, fat-free pudding)
1/2 cup Ensure Original Nutrition Powder Vanilla
1 cup frozen lowfat whipped topping, thawed

Directions

Preheat oven to 325°F. Mix wafer crumbs, chopped pecans, and butter in 13 x 9-inch baking dish. Be sure crumbs are moistened well and press firmly onto bottom of dish. Bake 15 minutes or until lightly golden brown. Let crumb mixture cool for at least 10 minutes. Top crumb crust with banana slices.
In large bowl, add Ensure Powder, pudding mix, and milk. Beat with wire whisk until well blended. Spoon half of the pudding mixture over the banana layer. Stir 1 cup of whipped topping into the remaining pudding mixture and pour over banana slices. Refrigerate for 3 hours. Serve with a dollop of whipped topping. Store leftovers in the refrigerator.
