Thanksgiving is right around the corner.  I’m the one who always cooks for the Holiday’s so I’m always looking for good things to make.  I came across this Thanksgiving Yam Casserole that I thought I would share with everyone.  Happy Cooking…

Thanksgiving Yam Casserole


1/3 cp Butter softened

3/4 cp  Granulated Sugar

1 can  Evaporated Milk (5oz

1 tsp Pure Vanilla Extract

1 tbsp Ground Cinnamon

1 can  Yams drained and mashed, (40oz)


1/2 cp  Corn Flakes chopped

1/4 cp  Chopped Pecans

1/4 cp Sweet Butter melted

1/2 tsp  Ground Cinnamon


Cream  sweet butter and  granulated sugar.

Add eggs, evaporated milk, pure vanilla extract and  ground cinnamon.

Add mashed  yams and stir very well until thoroughly mixed.

Pour into 7 x 11-inch microwavable baking pan and bake at 350°F for 45 minutes (or you can microwave on High for 10 to 11 minutes). While Yam mixture is cooking, begin prep for Topping.


Finely chop  corn flakes until you have a full 1/2 cup.

Mix together chopped corn flakes, chopped pecans, melted sweet butter and ground cinnamon (it will get sticky). Evenly distribute over casserole.

Bake for an additional 10 to 15 minutes (or microwave on High for 2 to 4 minutes).
